Easy, Healthy, Go To Lunch!
Today I ate one of my favorite go to meals:
I love this meal because of the crunchy veggies, the delicious roasted red pepper hummus, and those sweet, juicy red grapes for dessert. Since embracing a whole food plant-based diet, hummus has become a huge part of my life. I eat it on the regular! It’s a great food for me because it is made from chickpeas which is a type of bean. As I’ve mentioned before, beans are the one commonality between all the Blue Zones. That means that people who eat beans every day live longer and maintain their health for longer than those who don’t eat beans daily. I buy the Oasis brand of hummus from Natural Grocers. I choose this brand because it is made up entirely of whole ingredients AND it has no added oil. The original and roasted garlic flavors are delicious too. I eat this hummus with any and every vegetable I can get my hands on! Today it was snap peas, snow peas, and baby carrots. I also enjoy it with sliced cucumbers, celery, chopped red cabbage, broccoli, cauliflower… any veggie will work. I’ve even been known to spread this hummus over Ezekiel 4:9 toast. Yummy!

For dessert, red grapes. These were on sale at the grocery store today. Any fruit would have done. If I’m not quite full when I finish my plate, I’ll wash up a few more grapes or have a couple of nectarines to top me off. This is such an easy lunch; all I have to do is open up my bags of veggies and pop the top off of my hummus and this meal is ready to eat. I keep my fridge stocked with these ingredients so I can quickly and easily eat a nutritious, plant-based meal on the ready!
